OVERVIEW

The Grand Traverse Foodshed Alliance (GTFA) invites proposals from individuals aspiring to establish and operate a quick service food stall through its newly launched incubator program, Hatch @ NoBo Mrkt. We seek passionate entrepreneurs with unique food concepts that contribute to the richness of our local culinary landscape through their alignment with the Michigan Good Food Fund mission and goals. 

Hatch @ NoBo Mrkt is a partnership between GTFA and NoBo Mrkt, a new innovative food hall in downtown Traverse City's Commongrounds. NoBo Mrkt offers an anchor retail and beverage center, along with food stalls and pop up event and catering opportunities for aspiring chefs and locally sourced food purveyors from the Grand Traverse region.

GTFA is dedicated to the success of Michigan’s food culture and economy, acting as a needed source of guidance for entrepreneurs. As a connection point for local demand for sustainable, creative food products, GTFA supports the development of local food businesses with innovative thinking and community resources.

PROPOSAL SUBMISSION DEADLINE

Applications accepted on a rolling basis through 2024-2025.

Eligibility criteria

  1. Commitment to operating a quick service food stall that contributes to the cultural diversity of the Grand Traverse Region.

  2. Alignment with the MI Good Food Fund five impact areas: Healthy Food Access, Economic Development, Racial & Social Equity, Environmental Stewardship & Local Sourcing. 

  3. Willingness to actively participate in the comprehensive GTFA Incubator Program which includes Hatch @ NoBo Mrkt and Build Basics Grand Traverse.

proposal requirements

Interested individuals are invited to submit proposals that include the following elements:

  1. Introduction:

    • Brief personal background and motivation for participating in the GTFA Incubator Program.

  2. Business Concept:

    • Detailed description of the food concept, including the menu and unique selling points.

  3. Alignment with the Michigan Good Food Fund Scorecard for Restaurants:

    • Explanation of how your food stall concept contributes to the Michigan Good Food Fund’s goals within five impact areas: Healthy Food, Equity, Access, Economic Development & Job Creation, Local Sourcing and Environmental Stewardship.

  4. Operational Plan:

    • Outline of the proposed operational plan, including equipment needs, sourcing of ingredients, and ability to comply with health and safety regulations.

  5. Resume and References:

    • Resume detailing relevant experience in the food industry.

    • Professional references or recommendations, if available.

Selected participants will be initially notified by email and invited to join Hatch @ NoBo Mrkt.
